Synopsis
Palestinian chef Fadi Kattan and Canadian business partner Nicole Mankinen embark on an ambitious project: opening a Palestinian restaurant in Toronto. As they navigate construction delays, menu development, and the complexities of representing a cuisine shaped by displacement, events in Gaza and the West Bank escalate dramatically. The documentary follows their race toward opening night against a backdrop of mounting personal and collective crisis.
Through kitchen verité, phone calls with family under siege, and moments of community mobilization, the film explores what it means to preserve culinary heritage when the land and people that sustain it are under threat. The restaurant becomes a site of both cultural assertion and painful negotiation.
